REALLY! I SWEAR!

PORK RIND PANCAKES

I am on a low-carb diet and have been craving pancakes. Well here we have zero carb pancakes....I kid you not!  Put some butter on them and some low-carb syrup and you're in heaven.  These three are supposed to be a single serving but they are very filling.  Share this information with anyone you know on a low-carbohydrate diet.

My other craving is pizza and I am hoping to try a recipe I've found for pork rind pizza crust!!!  I'll let you know how that goes.

  2. Dear Annie ~~ The pancakes look so nice. I have a craving for banana fritters and make a batch every few days. Not on a any diet but just enjoy these with cinnamon sugar and ice-cream
    Thanks for your comments and I suppose you could say my health report from the doctor was positive. He said my blood tests were all goo, but ordered more next visit and every future visit so doesn't sound too wonderful. He also told me I had fluid on my lungs and that is an impending sign of heart failure. He didn't say how impendingand I have had this for quite a while now, so do not plan on worrying about it now. We just take it as it comes.

  4. Lynn -- There is some controversy about pork rinds but they are on the Weight Watcher's pyramid and you have to get the right kind...just pork rind and salt with no added ingredients. I have lost 25 lbs since starting this in July. I don't crave a lot of carbs and my diet is "low carb" not "no carb".

    Merle -- I thought "life" was an impending sign of heart failure:) Glad you have a right attitude and a strong will, especially since you eat banana fritters every few days.

  5. love pancakes - if i ever have to go on this diet, i will need the recipe, but right now i am losing weight by stealing french fries and potato chips off over peoples lunches (they chase you and you lose weight!).

  7. Whitemist -- You think of strange weight loss programs like my husband does. He takes a nap and says that he is "dieting".

    Jeanie -- I'm tempted to try making the pancakes without the cinnamon and nutmeg and making a sandwich with a couple. Right now even wheat bread is limited so anything that gets close to bread is a good thing:) Yes, I will post pizza pictures when I try that.

  8. I have eaten the low carb flax pancakes and muffins for years.
    they have 1 carb per 3 pancakes but its worth that for the fiber that moves the trash out of your system better an faster than a Roto Rooter:)
    I'll definately be giving this recipe a try- like in the morning..
