EASY RECIPE FOR BANANA NUT BREAD

This is a quick and easy recipe for delicious banana bread. Never throw out an over ripe banana again. If you can't make the bread right away, put the bananas in the freezer until you have a moment to whip up a couple of loaves of this bread. Even people who normally don't like banana bread like this yummy treat.

1 box yellow cake mix
3 eggs
1/3 cup oil
3 to 5 ripe mashed bananas
1 cup chopped pecans or walnuts

Mash 3 -5 ripe bananas in large mixing bowl.
Add 1 box yellow cake mix, 1/3 cup vegetable oil, 3 large eggs (or 4 small eggs), 1 cup chopped pecans or walnuts. Blend well and pour into two greased and floured loaf pans. Bake at 350 for 30 to 35 minutes. Cool in pan 10 minutes. Pop bread out of pans onto cooling rack and let sit for at least 20 minutes before cutting. Serve with a little butter or whipped topping.

I have made this bread twice this week so I thought of sharing the recipe with you. Don't ask why, it just seemed the thing to do. Enjoy:)

    Now I will make this. I am not a good baker so I will let you know how this turned out.

  5. Nancy -- It shouldn't be difficult to find almost ripe bananas at the store. Did you know if you separate bananas they will stay fresh longer? Oh yea, you want them over ripe fast. Oops.

  7. Hi Annie....the recipe sounds great and quite a bit easier than the one that I used this week to make banana bread. I will definitely try it out! Thanks. : )

    I have to tell you that my experience with freezing very ripe bananas did not do so well...I took them out the night before I needed them and put them in the refrigerator to thaw out. The next day they were black and slimey-- floating in about an inch of liquid....I ended up throwing them out. Maybe I should have used them right away!?!

  9. Ancient One -- Yes and you can peel and freeze them in a plastic bag or freeze them in the peel.

    Grammie -- frozen bananas thaw very quickly. If you freeze them in the peel,you need to peel them very quickly before they completely thaw or, yes,they are difficult to handle but still make good bread. It's okay to peel them and freeze them in a plastic bag.

    Pat MacKenzie -- I love any kind of bread that includes cranberry. Hum, wonder if I could add dried cranberries to my banana nut bread?

  13. Interesting twist on the easy tricks!

    I usually use one-half a yellow cake mix with one egg, half the oil and water, then peel n slice an apple and stick rows of wedges into the batter in an 8x8 cake pan- 350F about 35 minutes and that's my apple cake! Still got one in the fridge now- great for breakfast, as I'm sure that banana cake is... Thanks
